Cheese Egg Pocket

Ingredients:

For Roti

  • Whole Wheat flour - 2 cups

  • Oil - 2 tsp

  • Salt - 1 tsp

  • Water - to knead

For the filling:

  • Egg - 4

  • Grated Cheese - 1/2 cup

  • Onion - 1

  • Ginger - 1/2 inch grated

  • Turmeric Powder - 1/4 tsp

  • Chilli Powder - 1 - 1 1/2 tsp(as per your spice level)

  • Coriander Leaves - 2-3 sprigs

Procedure:

  • Add oil and salt to the wheat flour. Mix well.

  • Add water little by little and Knead the flour to make a soft dough.

  • Keep it aside to rest.

  • In a pan add some oil.

  • Add onion and Ginger. Sautee it for 5-8 mins.

  • Add salt, chilli powder and turmeric powder. Saute till the raw smell is gone.

  • Add eggs and scramble it, till the egg is cooked well.

  • Add the coriander leaf and mix well

  • Keep it aside.

  • Heat a Tawa

  • Make small balls out of Dough. Roll it out to small Rotis.

  • To one half of the Roti, add a small portion of the scrambled egg mix and grated cheese.

  • Fold the other half covering the egg mix and cheese.

  • Seal the sides and the ends with a fork or just by pressing with your finger.

  • Put it on the heated tawa, cook it till both sides are done.

  • It can also be shallow fried or Deep fried.
