Carrot Pesto Paneer

Ingredients:

To make Pesto

  • Carrot greens - 1 bunch

  • Mint leaves - 1 handful

  • Spinach Leaves(blanched) - 1 handful

  • Cashew Nuts - 10 no:s

  • Melon Seeds - 2 tbsp

  • Extra Virgin Olive Oil - 1/2 cup

  • Salt - as per taste

  • Garlic - 2 cloves

  • Green Chilli - 1 0r 2 

  • Paneer - 500 grams (cut into cubes)

Procedure:

  • Grind all the ingredients for Pesto to a coarse paste.

  • Add 2 tsp oil to the pan. 

  • Add Paneer and fry for a minute. Remove and keep aside.

  • Sautee the pesto for a minute, add paneer cubes and let it simmer for 2-3 minutes.

  • Switch off the flame and add 1 tsp lemon juice,
