Banana Malpua



  • All-Purpose Flour - 1 cup

  • Semolina - 1/4 cup

  • Sugar - 1/4 cup

  • Ripe Banana - 1

  • Baking soda - a pinch

  • Cardamom Powder - 1 tsp

  • Fennel Seeds - 1 1/2 tsp

  • Salt - a pinch

  • Milk - 1 cup

  • Almonds and Pistachios - 1tbsp and to garnish

  • Oil - to fry


  • Mash Ripe banana and Sugar to a paste.

  • Add flour, Semolina, Sugar, Fennel Seeds, Cardamom powder, Nuts and salt.

  • Add milk little by little and mix well to a thick batter of pouring consistency(like idli batter).

  • Keep it aside to rest for 30-45 minutes.

  • Heat oil in a pan to fry. 

  • Add Baking soda to the batter and mix well.

  • When the oil is heated, pour one ladle of batter and fry till its golden brown. 

  • (Cook until edges turn golden brown, about 2 minutes. Flip and fry until both sides are golden, 1 to 2 minutes more. Remove with a slotted spoon and let cool. Repeat with remaining batter.)

  • Remove to a serving plate and garnish with nuts.


  • (Instead of adding sugar to the Batter, you can make sugar syrup with one cup of sugar and 2 cups of water. Add cardamom powder. Boil till it reaches a thick consistency.

  • The fried malpuas can be soaked in this warm sugar syrup for a minute, Garnish and then serve.)
